Eat Better

Get some sleep
Take a nap if you can or go to bed ½ hour earlier- that is better. Do not feel bad about not falling asleep right away -just resting in bed will let your immune system reorganize itself.

Wash your Hands

Get your Flu shot if you have not done so already

Get your Flu shot if you have not done so already. The regular flu season is not over. It takes approximately 2 weeks for the annual flu shot to immunize. The whole idea is to not have a bad flu episode – the vaccine tends to mitigate the severity. If we are lucky this whole thing will slow down once summer starts in June. Just keep up the good work. It could be a COVID and Flu ganging upon us like tag-team wrestlers by Thanksgiving 2020. You want to have a really good immune system for that because a specific COVID -19 vaccine requires work – may be available by Mid 2021.

THYME ROASTED SHRIMP

High heat and herb-infused oil make this simple dish some of the juiciest, crunchiest shrimp you’ll ever have the pleasure of eating. Serve the shrimp as an appetizer, or as an entree with a salad and crusty bread. The shrimp also would be phenomenal over pasta.
INGREDIENTS
1/4 cup olive oil
12 thyme sprigs
2 peeled whole garlic cloves
2 pounds large shrimp (about 18 per pound), peeled and deveined
2 tablespoons balsamic vinegar
1 teaspoon salt
1/2 teaspoon ground black pepper
INSTRUCTIONS
Pour olive oil into a 9-by-13-inch baking dish or similarly sized roasting pan.
Add thyme sprigs and garlic to the dish. Set the dish in the oven and preheat the oven to 450 degrees for 15 to 20 minutes.
Lay shrimp over the thyme and garlic, then roast until pink and firm, about 8 minutes for medium shrimp (about 30 per pound) or 10 minutes for large shrimp (about 18 per pound), tossing gently two or three times.
Remove baking dish from the oven, and stir in vinegar, salt, and pepper. Serve.
Variation: To make Rosemary-Roasted Shrimp, substitute 5 rosemary sprigs for the thyme, and 2 tablespoons white wine vinegar for the balsamic.
