All about the Sauce

  Photo Credit  DXT_91     Pexels.com When you are out west, lets say Arizona or New Mexico, the servers ask if you like Christmas. If you say yes, red  and green sauces appear on your table .Using green salsa or red salsa  is the Mild (safe) way to go. Being authentic is using green habernero sauce (green hot chile pepper)  and the red chili in popular Sriracha. Of course you can get used to the heat and might be able to go with Wasabi which is Asian and Way Hot. Leftovers get creative- Ham Goulash

https://vimeo.com/249336800     if you want to share video or email it to yourself Ham Goulash  1 cup ham cubed / Ham  soaked overnight in cold water with a cut in half white potato to remove extra sodium !! 1 /2 cup cooked elbow noodles 1/2 cup tomato sauce or thick soup * 1/2 cup mixed frozen vegetables blanched 1/4 cup shredded mozzarella cheese Cook noodles according to box or use 2 cups of water boiling so they soak up water  and  Do not over cook noodles !!! cook 2 minutes less than what the box recommends  Place noodles, blanched vegetables and tomato sauce or soup in a big pan where it is easy to stir Add ham and cheese  stir until cheese is melted into sauce Serve  with more cheese on top for a nice look into a bowl Yields 3 servings of 3 & 1/3 cups each          Healthier choice--- spoon the contents of goulash onto greens  ---skip more cheese Total Calories  in 3 & 1/3      servings =  932       Total Sodium    in 3

Soulful Leftover turkey Lasagna

Sodium levels?   scroll down. .. * You Need to preheat oven to 350 degrees  8 by 8 by 2 inches deep pan  (makes  6-8 cups of casserole  which means @ nine  6 ounce servings)  Cooking spray or 2 tablespoons of oil to coat pan   Box of instant lasagna (cooks in oven)  or box of traditional lasagna  2 cups of turkey  rinsed in water (turkey dries out as leftovers very quickly -as a result it gets saltier)  1-2 cups of left over cooked  greens  (uncooked frozen vegetables okay  bar of cheese - cheddar or Velveeta- about 8 ounces  2-3  eggs uncooked Cook lasagna if you don't have instant lasagna   drain and let cool on a plate in strips that are not touching each other Beat eggs in a cup add to greens and mix thoroughly   Hint:  You can always mix more eggs to coat this dish   Carefu
